I've blogged for a bit (a few years ago) - under Wannabe Foodie, but I've been out of the blogging world for a while now (for reasons I may - or may not - get to eventually) - so I've decided to change up how and what I am going to blog. It is definitely time in my world - my universe - to change things up a bit. I will still talk obsessively about food and my family - so I've decided to steal a bit of my own words from my first blog for my introduction:
"I started talking about starting a food blog for at least two or three years. Why? Duh. Because I love food. I love to eat, to try new things and discover new flavors. I love to cook too. I love describing tastes of dishes, I love to recommend places to all of my friends (who also have told me that I should be writing a blog).
So - Hello!! Here is the first post of my blog. Will it always be about food? Will it always be a restaurant rave? Or a restaurant rant? Hell no!
It will be my random thoughts, which mostly revolve around me, my story, food, wine, my husband, my fur babies (referred from here on out as my kids) and my family and friends.
And I'll apologize now (well, not really apologize, but more explain) for the fact that I'm a very wordy, opinionated person - so my blogs may be much longer than you'd care to read. So? This is my space and I'll be as wordy as I want! ;)
Lets start with a basic intro: My name is Emily... Married to Dave... Where upon marriage and changing my name, I got the initials that would have made my life more of a hell in grade school, and no fat girl ever wants to get...EAT! =) <wonder why I'm doing a food blog? lol>

Well - welcome to me. This blog will become the story of me - the EmilyVerse - and all that goes on with in it (well, all that I have the courage to tell, at this point). It will change, it will evolve and it will hopefully be as full of the real, emotional, sarcastic, honest me as possible.
But to start - this is Day One. Day one of a 30 day Clean Eating food challenge that I've chosen to enter into. There are many reasons for this choice, which I will get into through out this challenge. However, I feel you should know, this commitment is BIG for me, as I am lazy...very, very lazy and eating processed foods are SO EASY!! It's the perfect answer to a lazy girl's life. (YES - the lazy girl is not to happy with me at the moment, but lucky me - determined girl has taken over for a while.)
A brief out line of clean eating: (and i do mean brief - people, you can google it if you want more details!) In a nutshell, it means eating mostly real foods in their whole, unprocessed, or fresh form—think whole vegetables, fruit, nuts, meat, seafood, plain dairy, and whole grains. *I will disclaimer here now - if clean eating meant I couldn't eat cheese - I'd have never have done it. I am an absolute cheese whore and it is apart of my every day life. Thank goodness the "don't eat" cheeses are not ones I usually eat since my discovery of all the wonderful cheeses out there. I can live with out American Cheese and CheeseWiz. No way I can go with out my Goat, Feta and Parmesan! :)
So I began yesterday with preparation. I'm told that preparation is key for this life change (and yes - not a diet ... a life change). "If you fail to plan, you plan to fail." So I prepped with an old favorite of mine - Quinoa and Lentil Salad. (now this is the fun part of having a food blog - already typed up recipes!)

So, this morning - Day one so far started off late for me. It's a Monday in the summer - and I'm off from work - and so is D! (happy dance!). So we got a late start. On the days I work, breakfast will be earlier and snacks in between. But today, there wasn't enough time in the day!
Breakfast was really fresh, ripe cantaloupe with cottage cheese and some chia seeds for crunch. We can get all into Chia Seeds here... (and see why to eat them at this site here.) But this is a delicious, clean and very filling breakfast or snack.
Lunch was about 4pm today after a day of humid outdoor shopping at the Outlets (because the sun didn't grace us - we didn't hit the beach as usual). I pulled out my prepared Quinoa salad and some already roasted chicken I had in the fridge and Lunch was served in about 3 minutes!
Dinner - a treat from Costco (where we did some shopping to get ready to eat clean!) - Filet Mignon with mashed cheesy cauliflower. D grilled the meat to a perfect medium rare and added a Gorgonzola butter (soft butter and Gorgonzola mixed together, rolled into a log and refrigerated).
The mashed cauliflower was so easy to make! Cauliflower Recipe Here - I took out the chicken base, added a touch of sour cream and because of my cheese addiction, I added some cheddar cheese as well - delicious!

Well, that is the end of Day one for me. One thing I learned today is that eating clean and drinking lots of water has made me feel so full today. I may have some fruit later for a touch of something sweet - we stocked up the house with peaches, watermelon, cantaloupe, strawberries and blueberries. Though right now, I can't imagine eating one more thing today!!

Life is so good in so many ways and I am thankful. Life is a journey with many forks in the road, hills and valleys, and I'm making my way through them all - one day at a time!
